Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onions and garlic until fragrant (2-3 minutes).
  • Add diced carrots and celery, cooking for another 3-4 minutes.
  • Incorporate shredded cabbage and stir thoroughly.
  • Pour in broth to cover vegetables.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.

Notes

The soup can be kept in the fridge for 3-4 days or frozen for up to 6 months. Add fresh herbs when reheating for enhanced flavor.
