  • 2 hard-boiled eggs peeled
  • 1 tbsp olive oil

Instructions
 

  • Wash the spinach thoroughly under cold water and set aside.
  • Heat olive oil in a skillet over medium heat. Add spinach and sauté until wilted. Season with salt and pepper to taste.
  • Boil eggs in a saucepan for 9–12 minutes. Transfer to an ice bath and peel once cooled.
  • Slice the boiled eggs and layer them over the sautéed spinach. Drizzle with extra olive oil or a sprinkle of cheese if desired.
