Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp bacon grease or butter
  • 1-2 tbsp sugar optional
  • 1/4 cup diced jalapeños optional
  • 1/2 cup shredded cheddar cheese optional
  • 1 tbsp fresh herbs such as rosemary, optional

Instructions
 

  • Preheat oven to 400°F. Place a cast-iron skillet inside to heat.
  • In a bowl, whisk together cornmeal, flour, baking powder, and salt.
  • In another bowl, beat the egg and add buttermilk and optional sugar or honey.
  • Combine wet and dry ingredients just until mixed. Do not overmix.
  • Carefully remove skillet from oven, add bacon grease to coat, and pour in batter.
  • Bake for 20–25 minutes until golden. Let cool slightly before slicing.

Notes

Optional ingredients like sugar, jalapeños, cheese, or herbs can add personal flair. For best results, always preheat your skillet for that classic crispy crust.
