Ingredients

  • 1 pound Salmon fillets Fresh or frozen
  • 2 medium Potatoes Cubed
  • 2 medium Carrots Sliced
  • 1 stalk Celery Chopped
  • 1 small Onion Chopped

Liquids and Seasonings

  • 4 cups Fish or chicken stock Fish stock is traditional
  • 2 tablespoons Heavy cream Optional for creaminess
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black pepper Adjust to taste
  • 1 tablespoon Lemon juice For brightness

Herbs

  • 1 bunch Fresh dill Chopped for flavor
  • 1 bunch Parsley or chives Optional for garnish

Instructions
 

Preparation

  • Slice all vegetables: potatoes, carrots, onions, and celery. Pat salmon fillets dry and cut into bite-sized chunks. If using frozen, allow to thaw completely.

Cooking

  • In a large pot, heat butter or olive oil and sauté chopped onions until soft and fragrant.
  • Add sliced carrots and chopped celery, cooking for a few minutes to enhance sweetness.
  • Pour in the fish or chicken stock and bring to a gentle boil. Add cubed potatoes and cook until fork-tender for 15-20 minutes.
  • Gently add salmon chunks to the pot, reduce heat to a simmer and cook for about 8-10 minutes until opaque and flaky.
  • Stir in heavy cream if desired; add fresh dill, salt, pepper, and a squeeze of lemon juice. Mix well.

Serving

  • Ladle soup into bowls, garnish with additional dill or parsley, and serve hot with crusty bread.

Notes

Avoid overcooking the salmon and always check for bones in the fillets. Personalize your soup with additional veggies or spices if desired.
