  • 1 packet 2 ¼ tsp active dry yeast
  • 1 ½ tsp salt
  • 1 tbsp granulated sugar
  • 1 cup warm water 110°F
  • ¾ cup fresh or dried blueberries
  • 1 tbsp honey for boiling water
  • 1 egg yolk
  • 1 tbsp water

Instructions
 

  • Prepare the Dough: In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  • Mix Ingredients: Add flour, salt, and blueberries. Knead the dough by hand or using a stand mixer for 8–10 minutes until smooth and elastic.
  • First Rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1–1.5 hours or until doubled in size.
  • Shape the Bagels: Punch down the dough and divide it into 8 equal portions. Roll each into a ball, then poke a hole in the center and stretch it into a bagel shape.
  • Second Rise: Cover the bagels and let them rise for 30 minutes.
  • Boil the Bagels: Bring a pot of water to a boil and add 1 tbsp honey. Boil each bagel for 45 seconds per side.
  • Egg Wash & Bake: Preheat oven to 425°F (220°C). Place bagels on a baking sheet, brush with egg wash, and bake for 18–20 minutes until golden brown.
  • Cool & Serve: Let bagels cool on a wire rack before slicing and serving with your favorite toppings.

Notes

Substitute whole wheat flour for a healthier version with added fiber.
Use vegan butter or coconut yogurt for a dairy-free topping.
Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
