Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 stalks celery chopped
  • 6 cups chicken or vegetable broth
  • 1 pound Italian sausage cooked and sliced (optional)
  • 2 cups kale or spinach chopped
  • 1 medium zucchini sliced
  • 1 can 15 oz white beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery. Cook for 4-5 minutes until softened and fragrant.
  • If using sausage, brown it in the pot with the aromatics. Remove and set aside.
  • Add broth, diced tomatoes, and white beans to the pot. Stir well and bring to a gentle simmer.
  • Stir in zucchini and let cook for 5-7 minutes until tender but not mushy.
  • Add kale or spinach during the last 5 minutes of cooking. Stir until wilted.
  • Add salt, pepper, and optional red pepper flakes or fresh herbs. Adjust seasonings as needed.
  • Squeeze in lemon juice for brightness and top with Parmesan cheese before serving.
  • Ladle soup into bowls and pair with crusty bread or crackers.

Notes

Make It Vegetarian: Omit sausage and use vegetable broth.
Storage: Store in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
Reheat: Add a splash of broth to restore consistency when reheating.
