Ingredients
  

For the Salmon

  • 2 pieces salmon fillets (6-8 oz each) Wild-caught preferred for best flavor.
  • 2 tbsp olive oil Used for marinating.
  • 1 piece juice of 1 lemon Adds brightness to the marinade.
  • 1 tsp garlic powder
  • 1 tsp dill
  • to taste Salt and pepper

For the Salad

  • 4 cups mixed greens (spinach, arugula, romaine) Your choice of mixed greens.
  • 1 cup cherry tomatoes, halved Adds sweetness.
  • 1 piece cucumber, sliced
  • 1/2 cup red onion, thinly sliced For a bit of crunch.
  • 1/4 cup crumbled feta cheese Adds creaminess.
  • 1/4 cup toasted almonds For added texture.

For the Dressing

  • 3 tbsp olive oil Base of the dressing.
  • 1 tbsp Dijon mustard Adds tanginess.
  • 1/2 piece juice of 1/2 lemon
  • 1 tbsp honey To balance flavors.
  • to taste Salt and pepper

Instructions
 

Marinating the Salmon

  • Mix olive oil, lemon juice, garlic powder, dill, salt, and pepper in a bowl. Coat the salmon fillets and let them marinate for 30 minutes.

Grilling the Salmon

  • Preheat your grill to medium-high heat. Grill the salmon for 3-4 minutes on each side or until it flakes easily with a fork. Let it rest for 5 minutes.

Preparing the Salad

  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and toasted almonds.

Making the Dressing

  • Whisk olive oil, Dijon mustard, lemon juice, honey, salt, and pepper in a small bowl. Drizzle over the salad and toss to combine.

Assembling the Salad

  • Place the grilled salmon on top of the salad and serve immediately.

Notes

Feel free to customize with additional toppings like avocado or swap feta for goat cheese for variety.
