  • 2 small zucchini, sliced
  • 1 small yellow onion, finely diced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Cooking Essentials

  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided

Instructions

Preparation

  • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in the garlic and cook for about 30 seconds until fragrant.
  • Add the sliced mushrooms and cook until tender, about 5-7 minutes.
  • Add the sliced zucchini, season with salt and pepper, and cook until tender, about 4-5 minutes.
  • Stir in the remaining butter until melted and well combined.
  • Garnish with fresh parsley before serving.

Notes

Cut the vegetables uniformly to ensure even cooking. Use fresh garlic for better flavor. Experiment with adding spices like thyme or rosemary for a different taste. If you like some heat, consider adding red pepper flakes while cooking. Store leftovers in an airtight container for 3-5 days.
