Ingredients
  

  • 2 large eggs
  • ½ cup milk or heavy cream
  • 1 tablespoon sugar optional, for sweet versions
  • ½ teaspoon vanilla extract for sweet versions
  • ½ teaspoon cinnamon optional, for sweet versions
  • A pinch of salt
  • 4 slices of thick bread brioche, challah, or Texas toast recommended
  • 2 tablespoons butter for cooking
  • Nutella & Bananas – 2 tablespoons Nutella ½ banana (sliced)
  • Strawberries & Cream – 2 tablespoons cream cheese 4 fresh strawberries (sliced)
  • Peanut Butter & Jelly – 1 tablespoon peanut butter 1 tablespoon strawberry or grape jelly
  • Apple Cinnamon Delight – ¼ cup cinnamon-spiced cooked apples
  • S’mores Style – 2 tablespoons marshmallow fluff 1 tablespoon chocolate chips
  • Ham & Cheese – 2 slices ham 1 slice Swiss or cheddar cheese
  • Turkey & Swiss – 2 slices turkey 1 slice Swiss cheese
  • Scrambled Eggs & Bacon – 1 scrambled egg 2 slices crispy bacon
  • Avocado & Fried Egg – ½ avocado sliced, 1 fried egg
  • Monte Cristo Style – 2 slices ham 1 slice Swiss cheese, dusted with powdered sugar & served with jam

Instructions
 

  • In a shallow bowl, whisk together the eggs, milk (or cream), sugar (if using), vanilla extract, cinnamon, and a pinch of salt.
  • Set aside and allow the mixture to blend for a minute.
  • Place your chosen filling between two slices of bread.
  • Lightly press the sandwich together to help it hold.
  • Quickly dip both sides of the sandwich into the egg mixture (about 3–4 seconds per side). Do not oversoak.
  • Heat a non-stick skillet or griddle over medium-low heat and melt 1 tablespoon of butter.
  • Place the sandwich in the skillet and cook for 3–4 minutes per side until golden brown and crispy.
  • Flip and cook the other side for another 2–3 minutes, pressing lightly with a spatula to help seal the sandwich.
  • For sweet sandwiches: Dust with powdered sugar and drizzle with maple syrup or honey.
  • For savory sandwiches: Serve with Dijon mustard, spicy mayo, or hollandaise sauce.

Notes

Bread Choice Matters: Brioche and challah provide the best texture for a rich, buttery taste.
For Extra Crispiness: Lightly press the sandwich while cooking to ensure a crispy exterior.
Avoid Soggy Bread: Dip the bread for only a few seconds to prevent it from becoming too wet.
