Instructions

Chutney Preparation

  • Blend cilantro, mint, green chili, lemon juice, salt, and water until smooth. Taste and adjust seasoning.

Filling Preparation

  • Heat a little oil in a pan, add mashed potatoes and spice mix. Cook until potatoes pick up the spices and smell toasty. If dry, sprinkle with water and finish with a squeeze of lemon. Set aside.

Veggies Sautéing

  • In the same pan, toss sliced onion and bell pepper with a pinch of salt for 2 minutes, keeping them slightly crisp.

Warming the Wraps

  • Heat a tawa or skillet, brush with oil or butter and warm each paratha until soft with light brown spots.

Roll Assembly

  • Lay a warm paratha on a board, smear with chutney, spoon on potato filling, and top with onions, cabbage, cilantro, and optional sauces. Sprinkle with chaat masala and roll tightly, tucking in the sides.

Toasting the Roll

  • Place the rolled Frankie seam side down on the hot pan for 30 to 60 seconds to seal and crisp lightly.

Notes

Make the potato filling ahead for better flavor. Always warm the paratha and give the rolled Frankie a quick toast for best results. Adjust spice levels as needed for kids.
