  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • ½ cup almond flour or oat flour for a gluten-free option
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Blend cottage cheese until smooth to remove lumps.
  • Mix ingredients: In a bowl, combine the blended cottage cheese, eggs, almond flour, Parmesan cheese, baking powder, garlic powder, Italian seasoning, and salt. Stir until a sticky dough forms.
  • Shape the crust: Spread the dough onto the prepared baking sheet, forming a ¼ inch thick circle.
  • Pre-bake the crust: Bake for 10-12 minutes until the edges turn golden brown.
  • Add toppings: Remove from oven, add your favorite sauce, cheese, and toppings.
  • Final bake: Return to the oven for another 10-12 minutes until the cheese is bubbly and the crust is fully cooked.
