Ingredients
  

Main Ingredients

  • 1.5 pounds chicken breast diced into bite-sized pieces
  • 4 medium russet potatoes diced into 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix or about 3 tablespoons
  • 2 cups shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 2 green onions sliced for garnish
  • sour cream optional, for serving
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Dice chicken and potatoes into bite-sized pieces.
  • Toss diced potatoes with olive oil and half of the ranch seasoning mix. Spread evenly in a greased 9x13-inch baking dish.
  • Top the potatoes with diced chicken and sprinkle the remaining ranch seasoning over the chicken. Cover with foil and bake for 30 minutes.
  • Remove the foil, sprinkle shredded cheddar cheese and crumbled bacon over the top. Bake uncovered for another 10-15 minutes until the cheese is melted and bubbly.
  • Let the casserole rest for 5-10 minutes. Garnish with sliced green onions and serve with optional sour cream.

Notes

Customize by adding veggies like broccoli or spicy elements like cayenne pepper. Swap potatoes for cauliflower for a low-carb version!
