1.5poundschicken breastdiced into bite-sized pieces
4mediumrusset potatoesdiced into 1/2-inch cubes
2tablespoonsolive oil
1packetranch seasoning mixor about 3 tablespoons
2cupsshredded cheddar cheese
6slicesbaconcooked and crumbled
2green onionssliced for garnish
sour creamoptional, for serving

Instructions
Preheat the oven to 400°F (200°C). Dice chicken and potatoes into bite-sized pieces.
Toss diced potatoes with olive oil and half of the ranch seasoning mix. Spread evenly in a greased 9x13-inch baking dish.
Top the potatoes with diced chicken and sprinkle the remaining ranch seasoning over the chicken. Cover with foil and bake for 30 minutes.
Remove the foil, sprinkle shredded cheddar cheese and crumbled bacon over the top. Bake uncovered for another 10-15 minutes until the cheese is melted and bubbly.
