  • 1 head head of cabbage Any variety will work, but green cabbage is the most common.
  • 4 large large eggs Choose free-range or organic eggs for the best flavor.
  • 2 tablespoons cooking oil Vegetable oil, canola oil, or coconut oil work well.
  • to taste Salt and pepper

  • 1 pinch red pepper flakes For a spicy kick.
  • 1 crumbled bacon or diced sausage For added protein.
  • 1 sautéed onions, bell peppers, or mushrooms For veggie boost.
  • 2-3 cloves minced garlic For those who love garlic.

Preparation

  • Remove any wilted outer leaves from the cabbage. Slice the cabbage in half, then thinly slice each half.
  • In a medium bowl, whisk the eggs together with a pinch of salt and pepper.

Cooking

  • Heat the cooking oil in a large skillet or wok over medium-high heat. Add the sliced cabbage and stir-fry for 5-7 minutes until it begins to soften.
  • Pour the whisked eggs over the cabbage in the skillet. Let the eggs cook undisturbed for a minute, then scramble them gently with a spatula, incorporating the cabbage.
  • Continue cooking until the eggs are set to your preference, then remove from heat.
  • Serve immediately.

Notes

Avoid overcrowding the pan. Control the heat to prevent burning. Season well and get creative with spices.
