Ingredients
  

For the filling

  • 8 oz cream cheese, softened Soften the cream cheese for easier mixing.
  • 1 cup shredded cheddar cheese You can substitute with pepper jack cheese for extra heat.
  • 1 cup cooked bacon, chopped Ensure bacon is well-drained before adding.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper Go easy on salt as bacon adds saltiness.

For assembly

  • 12 jalapeños Cut in half lengthwise and seeds removed.
  • 1 cup breadcrumbs, optional For a crisp topping.
  • to taste Cooking spray or oil For baking.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the jalapeños in half lengthwise. Remove the seeds and white ribs. Wear gloves to avoid pepper juice on your skin.
  • In a bowl, mix the softened cream cheese, cheddar cheese, bacon, garlic powder, and onion powder. Add salt and pepper to taste.
  • Spoon the cheese and bacon mixture into each jalapeño half.
  • If desired, sprinkle breadcrumbs over the filling and press lightly to adhere.
  • Set the filled peppers on a baking sheet, filling side up. Lightly spray them with cooking spray or drizzle with oil.

Baking

  • Bake for 20–25 minutes, until the peppers soften and the cheese is bubbly.
  • Let the poppers cool for a few minutes, then serve warm.

Notes

Serve warm with ranch dressing or sour cream on the side for dipping. Store leftovers in a sealed container in the fridge for up to 3-4 days. Reheat in a 350°F (175°C) oven.
